Spinach Pancakes

These green spinach pancakes are both colorful and delicious – perfect for lunchboxes, brunch, or as a healthy base for wraps. They are easy to make, and the spinach adds flavor, color, and extra nutrition. Serve them with hummus, vegetables, cheese, or your favorite filling.

Ingredients

  • 300 ml milk
  • 3 eggs
  • 100 g fresh spinach
  • 150 g flour
  • 1 tsp coarse salt

Instructions

  1. Blend all the ingredients for the pancakes.
  2. Heat a little butter in a pan over medium heat and let it melt.
  3. Pour the pancake batter onto a 24 cm diameter pan so it reaches the edges.
  4. Flip the pancake when it releases from the edges. Continue with the rest of the batter.
