Raspberry Slices

Raspberry slices are a classic Danish pastry consisting of two layers of shortcrust pastry with a sweet layer of raspberry jam in between. They are typically topped with icing and often sprinkled with carnival sprinkles, adding an extra sweet touch. They are perfect for the coffee table, as a cozy weekend cake, or when you need a little extra indulgence. Some prefer to assemble them with jam after they have been baked, but I think it gives an extra delicious flavor to bake the jam with it, making it more of a cake rather than just a biscuit with jam - of course, you choose yourself.

Ingredients

  • Shortcrust Pastry
  • 250 g all-purpose flour
  • 40 g powdered sugar
  • 150 g butter
  • 1 egg
  • Raspberry Slices
  • 200 ml raspberry jam
  • 200 g powdered sugar

Instructions

  1. Shortcrust Pastry
  2. Mix flour and powdered sugar and crumble the butter into it.
  3. Combine the dough with the egg and refrigerate for at least 30 minutes.
  4. Raspberry Slices
  5. Roll out the dough into a rectangle the size of a baking sheet and cut it in two.
  6. Spread raspberry jam on one rectangle and place the other on top. Press the dough slightly at the edges and prick the cake with a fork.
  7. Bake the cake at 200ºC (conventional oven) for 20 - 25 minutes until golden. Let it cool.
  8. Mix powdered sugar with warm water to the desired consistency, spread it on the cake, and sprinkle with freeze-dried raspberries or sprinkles.
  9. Once the icing has set, cut the cake into slices of the desired size with a sharp knife.
