Potato Pizza with Mascarpone

A delicious, crispy potato pizza with creamy mascarpone, garlic, and mozzarella. Topped with fresh rosemary - simple, rustic, and truly good.

Potato Pizza with Mascarpone

Ingredients

  • Dough
  • 10 g yeast
  • 300 ml water
  • 1 tbsp olive oil
  • 2 tsp coarse salt
  • 400 g pizza flour
  • Topping
  • 250 g mascarpone
  • 5 cloves garlic
  • 1 ½ tbsp olive oil
  • Freshly ground pepper
  • 3 potatoes
  • 1 ball mozzarella
  • Rosemary

Instructions

  1. Dough
  2. Dissolve the yeast in the water and stir in the rest of the ingredients
  3. Let the dough rise covered for at least 3 hours
  4. Topping
  5. Press the garlic and mix with mascarpone, olive oil, salt, and pepper
  6. Roll out the dough on a board sprinkled with semolina flour
  7. Place the pizza on a baking sheet sprinkled with semolina flour (without baking paper)
  8. Spread the mascarpone cream on the base
  9. Slice the potatoes thinly and distribute them on the pizza
  10. Crumble mozzarella and bake the pizza at 220°C fan-forced for 10 - 12 minutes
  11. Serve with fresh rosemary and a bit of flaky salt
