Pea Soup

A simple and flavorful pea soup with tender potatoes, sweet peas, and a creamy finish of green herbed cream cheese. Quick to make and perfect as both a weekday meal and an appetizer.

Pea Soup

Ingredients

  • 2 onions
  • 300 g potatoes
  • 300 g peas
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp pepper
  • 1 tsp salt
  • 1 bouillon cube
  • 750 ml water
  • 50 ml cream
  • 100 g green herbed cream cheese

Instructions

  1. Chop onions and sauté them in oil in a pot
  2. Peel the potatoes and cut them into cubes
  3. Add potatoes, peas, and spices to the pot
  4. Add water and bouillon and let the soup simmer for 20 minutes
  5. Blend the soup and season it with salt and pepper
  6. Add whipping cream and herbed cream cheese to the soup and stir
  7. Serve with bacon and fresh thyme
