Heat a pan over medium heat with a little olive oil
Chop the shallot and garlic and sauté in the pan
Add sliced mushrooms and cook until golden
Rinse spinach and cook until wilted with the mushrooms
Season with salt and pepper
Grate the zest of the lemon and add along with the juice of ½ lemon
Arrange on a platter and shave plenty of cheese over
