Kammerjunkere (Danish Biscuits)

Crispy, sweet, and filled with the classic taste of Danish summer. These homemade kammerjunkere are easy to make and have a delightful crunchy texture, making them perfect for a bowl of koldskål (buttermilk dessert). They also taste wonderful as a small snack with coffee or tea.

Kammerjunkere (Danish Biscuits)

Ingredients

  • 30 g sugar
  • 180 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 40 g butter
  • 4 tbsp milk
  • 1 egg

Instructions

  1. Mix sugar, all-purpose flour, baking powder, and vanilla sugar
  2. Stir in the cold butter until it forms a crumbly dough
  3. Combine the dough with milk and egg. Add more flour if the dough is sticky
  4. Shape into 25 balls, place them on a baking tray, and bake at 180°C (conventional oven) for 10 minutes
  5. Split the balls to create a top and a bottom
  6. Place them on a rack with baking paper and dry them in the oven at 160°C (fan-forced) for 10 minutes
  7. Serve with koldskål
