Dough
Dissolve the yeast in warm milk and stir in the eggs
Add sugar, flour, cinnamon, cardamom, nutmeg, and salt, and knead the dough until it comes together
Add the butter in small pieces and continue kneading for 5 minutes until the dough is soft and elastic, then let it rise covered for 1 hour
Turn the dough out onto a floured surface and knead in the raisins and orange zest
Divide the dough into 12 pieces, shape them into buns, and place them close together on a baking sheet lined with parchment paper
Let them rise covered for another 30 minutes

Mix flour, water, and oil together to form a thick paste
Place the flour mixture in a piping bag with a small hole and pipe it as a cross on the buns
Bake the buns at 200°C (fan) for 15 minutes
Meanwhile, make the glaze

Bring water and sugar to a boil in a saucepan until the sugar is dissolved
As soon as the buns are taken out of the oven, brush them immediately with the sugar mixture
