Homemade Christmas Marshmallows

Soft and airy Christmas marshmallows with a mild strawberry flavor that tastes fresh and slightly sweet. The pink marshmallow pieces are easy to make and perfect as small Christmas treats or as gifts in December.

Homemade Christmas Marshmallows

Ingredients

  • 10 sheets of gelatin
  • 1 ½ tsp vanilla sugar
  • 100 ml water
  • 200 g sugar
  • ½ pinch of salt
  • 2 tsp strawberry flavoring
  • Powdered sugar
  • Freeze-dried strawberries

Instructions

  1. Soak the gelatin in cold water
  2. Boil water, sugar, salt, and vanilla sugar to approximately 115°C
  3. Squeeze the water out of the gelatin and stir it into the hot sugar syrup
  4. Whisk the mixture at high speed until it becomes light, airy, and thick
  5. Add the strawberry flavoring during whisking
  6. Line a mold with baking paper and dust with powdered sugar
  7. Put the marshmallow mixture into a piping bag and pipe marshmallows in the desired shape
  8. Sprinkle with freeze-dried strawberries and sift powdered sugar over them
  9. Let them dry for at least 3 hours, preferably overnight
