Grandfather's Beard

Grandfather's Beard is a traditional Danish cake with three layers that together create a sweet, soft, and slightly tangy classic. The cake consists of a spongy and light base, a layer of fruit in the form of jam, and a thick, airy topping of sweet meringue. When the cake is baked, the base becomes light and golden, while the jam provides a fresh and juicy contrast to the sweet meringue, which becomes slightly crispy and golden in the oven. The combination makes the cake both soft, airy, and a bit chewy on top, and it is particularly known from the Danish coffee table and cozy afternoons.

  • 125 g butter
  • 125 g sugar
  • 4 egg yolks
  • 120 g flour
  • 2 tsp baking powder
  • 2 tsp vanilla sugar
  • 50 ml milk
  • Filling
  • 6 tbsp raspberry jam
  • Meringue
  • 4 egg whites
  • 300 ml sugar

Instructions

  1. Dough
  2. Whisk together sugar and butter, then whisk in the egg yolks
  3. Fold flour, baking powder, and vanilla sugar into the batter, and finally add milk
  4. Pour the batter into a greased 24 cm springform pan lined with baking paper on the sides, and bake the cake at 185°C conventional oven for 25 minutes
  5. Meringue
  6. Meanwhile, whisk the egg whites until stiff and add sugar gradually
  7. Filling
  8. Spread the jam over the cake and top with meringue
  9. Continue baking the cake at 185°C conventional oven for 20 minutes until the meringue is golden
