Dumplings

Preparation time: 60 minutes
Cooking time: 15 minutes
Servings: 4

Dumplings, or gyoza, are a delicious Asian dish consisting of a filling embraced by a simply beautifully folded dough. You can vary the filling, for example, to make it purely vegetarian. The beautiful folding technique can be a bit challenging the first time, see the video for guidance.

Dumplings

Ingredients

  • Dough
  • 500 g wheat flour
  • 350 ml boiling water
  • 2 tsp salt
  • Filling
  • 500 g pork
  • 4 spring onions
  • 1½ piece ginger
  • 4 cloves garlic
  • ½ tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Instructions

  1. Dough
  2. Dissolve the salt in the hot water and knead in the flour until it becomes a uniform dough
  3. Let the dough rest for 30 minutes
  4. Filling
  5. Mix the meat with chopped spring onions, garlic, grated ginger, and the sauces
  6. Let the filling chill for 30 minutes
  7. Dumplings
  8. Roll the dough out thinly, either with a rolling pin or a pasta machine
  9. Cut the dough into circles about 8 cm in diameter
  10. Place a teaspoon of filling in the center of each circle, brush the top half of the circle with water and fold the dumplings by making small "curtains" over the dough (see video for guidance)
  11. Then fry the dumplings in a hot pan with a little oil until they have a bit of color on the bottom
  12. Pour 100 ml water into the pan and cover the pan with a lid, so they steam
  13. Serve dumplings with, for example, soy sauce, goma dressing, toasted sesame seeds, and spring onions

Tarte Tatin with Caramelized Onions

Tarte Tatin with caramelized onions, or Tarte Tatin Aux Oignons, is a delicate French tart with sweet onions made in the upside-down manner where the crust is placed over the filling. Here, I have used 8 small molds, but you can easily make it in one large tart pan, in which case only one roll of puff pastry is needed. Bon Appétit!
