Cream Puffs with Strawberries

These elegant cream puffs combine a chewy base of baked marzipan with a light, sweet foam and a fresh strawberry in the center. Each cream puff is coated with crisp dark chocolate and garnished with freeze-dried strawberries for a beautiful and inviting appearance. A delicious and luxurious version of the classic cream puff.

Cream Puffs with Strawberries

Ingredients

  • Bases
  • 150 g marzipan
  • 70 g sugar
  • 1 ½ egg whites
  • Foam
  • 3 tbsp water
  • 45 g glucose syrup
  • 100 g sugar
  • 2 pasteurized egg whites
  • 10 g sugar
  • 12 fresh strawberries
  • Decoration
  • 200 g dark chocolate

Instructions

  1. Bases
  2. Knead marzipan with egg whites and sugar into a uniform mass
  3. Place the mass in a piping bag with a round nozzle and pipe 10 circles onto a baking sheet lined with parchment paper
  4. Bake the bases in a conventional oven at 190°C for 8 - 10 minutes
  5. Let the bases cool completely
  6. Foam
  7. Boil water, sugar, and glucose syrup until it reaches a temperature of about 110°C
  8. Whisk egg whites and sugar at full speed in a mixer
  9. When the sugar mixture reaches about 118°C, slowly pour it into the egg whites while whisking
  10. Whisk the foam for about 10 minutes until it is completely firm
  11. Clean the strawberries and cut off the tops
  12. Place a suitably sized strawberry on each base
  13. Put the foam in a piping bag and pipe it around each strawberry to cover it
  14. Let the cream puffs sit for at least one hour to dry
  15. Melt 2/3 of the chocolate, remove from heat, and stir in the remaining 1/3
  16. Place the cream puffs on a rack and pour the chocolate over them
  17. Garnish with freeze-dried strawberries
