Chili sin Carne

Chili sin carne is a vegetarian version of the classic Mexican dish. The dish is full of flavor and spices and is a great option for a meat-free day. Serve the dish with rice and tortilla chips and drizzle with lime juice.

Ingredients

  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp chili powder
  • 2 onions
  • 4 cloves garlic
  • 150 g carrots
  • 1 red bell pepper
  • 2 cans kidney beans (approx. 400g)
  • 1 can chopped tomatoes
  • 2 tsp salt
  • 400 ml rice

Instructions

  1. Sauté cumin, coriander, chili powder, onions, and garlic in a sauté pan
  2. Add chopped carrots and bell pepper and continue to sauté
  3. Add kidney beans, chopped tomatoes, and salt and let the dish simmer for 10 minutes
  4. Cook for 10 - 12 minutes
  5. Serve with tortilla chips and lime juice
