Chicken Dumplings

Delicious homemade dumplings with juicy chicken filling and crispy pointed cabbage. They have a crispy bottom and are steamed to perfect consistency - ideal with soy or goma dressing.

Chicken Dumplings

Ingredients

  • Dough
  • 500 g all-purpose flour
  • 3½ dl boiling water
  • 2 tsp salt
  • Filling
  • 400 g minced chicken
  • 1/4 pointed cabbage
  • 4 spring onions
  • 20 g freshly grated ginger
  • 3 cloves garlic
  • ½ tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Instructions

  1. Dough
  2. Dissolve salt in the hot water and knead in the flour until it becomes a uniform dough
  3. Let the dough rest for ½ hour
  4. Filling
  5. Mix minced chicken with finely sliced pointed cabbage and the remaining ingredients
  6. Chill the filling
  7. Dumplings
  8. Roll the dough out thinly, either with a rolling pin or a pasta machine
  9. Cut the dough into circles about 8 cm in diameter
  10. Place a teaspoon of filling in the center of each circle, brush the top half of the circle with water and
  11. fold the dumplings in the desired manner
  12. Then fry the dumplings in a hot pan with a little oil until they have a slight color on the bottom
  13. Pour 1 dl water into the pan and cover the pan with a lid to steam them
  14. Serve dumplings with, for example, soy sauce, goma dressing, toasted sesame, and spring onions
