Carrot Cake

A delicious and moist carrot cake with cream cheese frosting, perfect for autumn. The cake is full of flavor and super easy to make. Optionally, add raisins for extra sweetness.

Carrot Cake

Ingredients

  • Carrot Cake
  • 150 g brown sugar
  • 100 g butter
  • 2 eggs
  • 140 g all-purpose flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla sugar
  • 1 tsp ground ginger
  • 1 tsp ground cardamom
  • 1 pinch of salt
  • 200 g carrots
  • 50 g walnuts
  • Cream Cheese Frosting
  • 200 g plain cream cheese
  • 125 g powdered sugar
  • 1 tsp vanilla sugar
  • 50 g butter

Instructions

  1. Carrot Cake
  2. Whisk together brown sugar, butter, and eggs
  3. Mix all-purpose flour, baking powder, cinnamon, vanilla sugar, ground ginger, ground cardamom, and salt together
  4. Finely grate the carrots and chop the walnuts
  5. Fold the flour mixture into the batter and add the carrots and walnuts
  6. Pour the batter into a greased springform pan and bake the cake for 40-45 minutes at 180°C conventional oven
  7. Cream Cheese Frosting
  8. Whisk all ingredients well together
  9. Split the cake and spread the cream cheese frosting on the bottom layer and place the other half on top with the remaining cream cheese frosting
  10. Top with chopped walnuts
