In a stand mixer, whisk eggs and sugar for 10 minutes until thick and fluffy.
Sift potato flour, all-purpose flour, baking powder, and vanilla sugar, and gently fold into the egg mixture.
Pour the batter into a 22 cm (8.7 inch) cake ring (do not grease) and bake the layer at 180°C (356°F) fan-forced for 25 minutes. Remember not to open the oven door, as the layer will collapse.
Once removed from the oven, let it cool completely on a wire rack.
Then, slice the layer into three parts.
