Cake Layers

Classic cake layers are the foundation of any good layer cake, light, airy, and with a mild, sweet flavor that suits almost any type of filling. They are baked with a few simple ingredients and get their characteristic soft and spongy texture from a fluffy egg mixture.

  • 3 eggs
  • 175 g sugar
  • 80 g potato flour
  • 80 g all-purpose flour
  • 1 tsp baking powder
  • 2 tsp vanilla sugar

Instructions

  1. In a stand mixer, whisk eggs and sugar for 10 minutes until thick and fluffy.
  2. Sift potato flour, all-purpose flour, baking powder, and vanilla sugar, and gently fold into the egg mixture.
  3. Pour the batter into a 22 cm (8.7 inch) cake ring (do not grease) and bake the layer at 180°C (356°F) fan-forced for 25 minutes. Remember not to open the oven door, as the layer will collapse.
  4. Once removed from the oven, let it cool completely on a wire rack.
  5. Then, slice the layer into three parts.
