Cook the pasta 3 minutes shorter than indicated on the package. Remember to save the pasta water.
Crush the peppercorns in a mortar and toast them in a hot, dry pan. Remember to stir.
Add 100 ml of pasta water to the pan and stir.
Grate Pecorino Romano into a bowl, add 100 ml of pasta water, and whisk it into a creamy mixture.
Toss the cooked pasta with a little extra pasta water in the pan.
Add the cheese mixture and an additional 100 ml of pasta water and stir well.
