Birthday Layer Cake

A classic and delicious layer cake with airy sponge layers and a creamy rich filling with whipped cream, fruit, and chocolate. The cake is topped with cocoa glaze, whipped cream, and fresh fruit. Perfect as a celebration cake for birthdays or other cozy occasions. In this recipe, I used grapes, banana, and apple, but you can easily substitute with your favorite fruits.

Birthday Layer Cake

Ingredients

  • Sponge Layers
  • 4 eggs
  • 85 g sugar
  • 60 g all-purpose flour
  • 2 tbsp potato starch
  • 1 tsp baking powder
  • Cream
  • 1 egg
  • 200 ml milk
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 vanilla pod
  • 250 ml heavy cream
  • 2 sheets gelatin
  • 300 g grapes
  • 1 banana
  • 1 apple
  • 100 g chocolate
  • Decoration
  • 200 g powdered sugar
  • 2 tbsp cocoa powder
  • 50 ml boiling water
  • 300 ml heavy cream

Instructions

  1. Sponge Layers
  2. Whisk eggs and sugar until light and fluffy
  3. Gently fold in all-purpose flour, potato starch, and baking powder into the batter
  4. Bake the batter in a greased 22 cm (8.5 inch) springform pan at 175°C (347°F) conventional oven for 20 - 25 minutes
  5. Once cooled, split the cake layer into two
  6. Cream
  7. Whisk egg, milk, sugar, cornstarch, and the seeds from the vanilla pod together in a saucepan
  8. Heat the mixture while stirring constantly until it thickens
  9. Let the cream cool completely
  10. Whip the cream until stiff peaks form and fold it into the cooled cream
  11. Soak gelatin sheets in cold water for 10 minutes
  12. Squeeze out excess water from the gelatin and melt it over a water bath. Stir it immediately into the cream
  13. Cut the fruit into small cubes, coarsely chop the chocolate, and fold it into the cream
  14. Place one sponge layer in a cake ring lined with cake acetate, spread the cream, and place the second layer on top
  15. Chill the cake for at least 3 hours or preferably overnight
  16. Decoration
  17. Mix powdered sugar, cocoa powder, and boiling water into a thick glaze and spread it immediately on top of the cake
  18. Whip the cream until stiff peaks form and pipe it onto the cake
  19. Decorate with fruit
