Birthday Layer Cake
A classic and delicious layer cake with airy sponge layers and a creamy rich filling with whipped cream, fruit, and chocolate. The cake is topped with cocoa glaze, whipped cream, and fresh fruit. Perfect as a celebration cake for birthdays or other cozy occasions. In this recipe, I used grapes, banana, and apple, but you can easily substitute with your favorite fruits.

Sponge Layers
Whisk eggs and sugar until light and fluffy
Gently fold in all-purpose flour, potato starch, and baking powder into the batter
Bake the batter in a greased 22 cm (8.5 inch) springform pan at 175°C (347°F) conventional oven for 20 - 25 minutes
Once cooled, split the cake layer into two
Cream
Whisk egg, milk, sugar, cornstarch, and the seeds from the vanilla pod together in a saucepan
Heat the mixture while stirring constantly until it thickens
Let the cream cool completely
Whip the cream until stiff peaks form and fold it into the cooled cream
Soak gelatin sheets in cold water for 10 minutes
Squeeze out excess water from the gelatin and melt it over a water bath. Stir it immediately into the cream
Cut the fruit into small cubes, coarsely chop the chocolate, and fold it into the cream
Place one sponge layer in a cake ring lined with cake acetate, spread the cream, and place the second layer on top
Chill the cake for at least 3 hours or preferably overnight
Decoration
Mix powdered sugar, cocoa powder, and boiling water into a thick glaze and spread it immediately on top of the cake
Whip the cream until stiff peaks form and pipe it onto the cake
Decorate with fruit

En bager viste mig engang, at det er smart at smøre et glat lag flødeskum langs hele kanten, før man sprøjter den op med flødeskum, så bliver kanten altid siddende.
